Potato Beef Soup

Potato Beef SoupA warm inviting bowl of soup is always a nice thing to be greeted at by the dinner table. I make a lot of soup. It’s an easy stand by dinner, that everyone in the house loves. My hubby isn’t all the fond of soup from a can, however he will eat homemade quite happily. I was a bit surprised when this soup needed to simmer for 45 minutes. It didn’t help that I was really hungry when I decided to start supper….late. But I was patient and it payed off, because this soup was really yummy, and although took a while it was really easy too. I am forever trying to get in the habit of reading a recipe straight through to the end when adding it to my meal plan, but to be honest I stop after the ingredients, then read the actual directions when i start cooking. Some day I will learn, that this doesn’t always work. Ah well.

Recipe slightly adapted from Allrecipes

  • 1 pound ground beef
  • 1 onion, peeled and chopped
  • 1 (28 ounce) can whole tomatoes
  • 6 potatoes, peeled and diced
  • 2 tsp. salt
  • 1 tsp. pepper
  • 1 tsp. hot pepper sauce
  • 3 cups water

1. Brown ground beef with onion until beef is completely cooked through.

2. Add remaining ingredients. Bring to a boil. Reduce heat and simmer for 45 minutes, covered, stirring occasionally.

3. Eat and enjoy!
